美味私房菜清蒸金鲳鱼

金鲳鱼是海水养殖鱼，具有肉厚、味鲜、嫩滑的特点，加上其刺少肉嫩，骨软多脂，是老少皆宜的食用鱼类。刘雯说，金鲳鱼通常用来清蒸或红烧，用清蒸之法，可衬托鱼肉甘腴鲜美之味，很合她清淡的口味；用红烧之法，将鲳鱼先油炸后红烧，可使鱼肉香口入味，味道一级棒！　　烹制材料(三人份)
　　材料：金鲳鱼(1尾，1斤多)、葱(3根)、大葱(半根)、姜(1块)、蒜(6瓣)、香菜(2棵)
. Y+ ]0 N8 e6 E" v2 K# s　　调料：油(2汤匙)、白胡椒粉(1/3汤匙)、海天蒸鱼豉油(3汤匙)、盐(1/2汤匙)

第一步

　　1　洗净宰杀的金鲳鱼，在鱼身双面各划三刀，抹上少许盐，再涂上一层油，稍腌10分钟。

　　2　葱去头尾洗净，一半切段，一半剁末；大葱拍扁切丝；蒜和香菜分别剁成末；姜去皮洗净，一半切片，一半姜剁末。

　　3　在碟中铺上姜片和葱段，往鱼腹内塞入适量大葱和姜片，在鱼身上放姜片。

第四步

　　4　烧开锅内的水，放入金鲳鱼，加盖大火隔水清蒸8～10分钟。

　　5　取出蒸好的金鲳鱼，去掉大葱、葱段和姜片。

　　6　往鱼身上，放入葱姜蒜末和香菜末，洒入1/3汤匙白胡椒粉。

　　7　先烧热2汤匙油，淋在鱼身上，再烧热3汤匙海天蒸鱼豉油，也淋在鱼身上，即可上桌。

厨神贴士

　　1、在鱼腹内和鱼身下，塞入姜片和葱段，清蒸时既可以去除鱼腥味，又可缩短蒸鱼的时间。
　　2、在鱼身上划几刀，可使鲳鱼清蒸时受热均匀，成熟度一致。
# {* x* w! U) q- O2 N" ]* _　　3、一斤多的金鲳鱼，清蒸时间为8～10分钟，蒸至鱼眼变白突起，为已熟的标准。
7 }: T" O' @! n" P& ~' H) n) V) T　　4、蒸鱼豉油味道偏甜，鲜味较浓，咸淡适中，适合用来给鱼或海鲜调味，不宜用酱油或生抽，否则成菜会过咸。
